Do you mean manually, on a case-by-case basis? What entry tool are you using?

Or do you mean automatically, everywhere, in the entire document?

Individually, in Speedy - slash (/) to beam (or un-beam) to previous note.
Several at once - select region > Utilities > Rebeam

Assuming you are in 3/4, set your time signature to 1, dotted quarter. In More Options, set the time signature to display as 3/4.

Actually, a dotted half. If the music has been entered, select it and use Rebeam.
