Trying to do a gradual ritard but it doesn't seem to be working.

I've tried creating a shape that, I think, should slow the temp by 5 bpm on each 1/8 note.

It seems that expressions are always exactly 16 notes and only take effect at the beginning of a measure.  The amount of ritard also doesn't seem to be controllable.

I'm sure I'm just being stupid about something but I've been reading manuals, tutorials, and playing around but can't get it to work at all.

yeah, user defined expressions for temp changes and dynamic changes are totally broken.  Or the manual is just plain wrong.

Going to try individual temp alterations on each note to see if I can work around this bug.

Try making use of Human Playback by starting the ritard where you want it to start and then setting a target tempo mark where the ritard should stabilize. You can hide the target tempo if you wish.
