In the meantime, here's a great salsa chicken recipe to cook in your slow cooker while you compose or practice:
- 3 lbs of chicken thighs, bone in or out
- 1 lbs pinto beans, soaked overnight
- 1 can of diced tomatoes
- 2 cups assorted vegetables
- 1 large can of salsa
- Salt to taste
- Depending on altitude it may be a good idea to add half a cup of water
Mix in a 4 quart slow cooker and cook on low heat for 6-8 hours.
Just testing something
