I have experienced no problems with dynamics when I use start from leftmost measure. Sorry if that is not true in your case.
When you use the spacebar to start playback, the playback skips Human Playback (HP), which would indeed affect your dynamics during playback. I tend to use Play From Leftmost Measure to avoid this....
Are we talking about a full score or the requirements for individual parts. As Mike said, an image would be very helpful determining what you want.
