Rather than using a grand staff, use two independent staves joined with a brace. The grand staff bracket should be reserved for the instruments that require it: piano, xylophone, etc.

Does this happen if you enter the lyric in the lyric window, and use click-assign?

What version are you using? I haven't noticed that in 2014.5 or earlier.

Finale won't create your music. You do that. Finale can only notate what you compose. As suggested, start with the videos. When you have specific questions, we can answer them.

Follow JAV's instructions. Be aware, though, that the chord voicings are pretty lame. So it may not sound as good as you want it to.
