I chose the Handbell option because I'm arranging for them, but I find the playback tones really out of tune and therefore very distracting when I'm listening to what I've done so far.  I'd like to change the instrumentation to piano so I can hear the chords better - how do I do that on a score that's already 50 measures in?

Go to the Score Manager and change the playback instrument, there.

Please add the operating system, program, and version you are using to your signature, in the user control panel.

You can reach the control panel via a pull-down menu behind your name at the top of the screen. Please edit your profile (there is one box that is not pre-filled) to show your computer operating system and the version of Finale you are using.
