Given how orchestral vst's are more cpu efficient when you work in them rather than using the mixer on FL Studio, I do that with midi outputs channels to play the tracks. When I pause the track to do shit, the mixer inside GPO just resets. My harps are now suddenly drowned out by loud violins and so on. Is there a way to keep my settings stay in place when I stop my track?

I had this problem as well. Turns out it's the "MIDI Out" that is sending FL's channel volume to the plugin, which override your mixer slider adjustments. To be clear: this is the "instrument" channel volume, not an effect channel volume.
You need to adjust the volume knobs for your "MIDI Out" channel instrument within FL (like in the instrument properties or in the step sequencer) and it will adjust the mixer slider in the plugin.
It's a little confusing because it only works in one direction FL->Plugin. However, this solution may only apply to older FL versions and Brian's suggestion may work for newer FL versions.
The mixer sliders in ARIA represent CC7. In the absence of any CC7 data from your DAW, ARIA will use the default level defined in the instrument's definition (which is usually 101 in Garritan instruments).
There shouldn't be a CPU penalty for using the DAW's own mixer -- it's already mixing the track at some value; you just need to change it.
