Is there a way to have different smart shapes display and print with different colors? I would like to place a custom line that is red, but have my crescendo and diminuendo marks be black.

It seems that I can only change the display colors of all of the smart shapes in the document.

 

Finale Version 2014.5.7098

MacBook Pro running High Sierra (10.13.1)

That is correct. Finale's colors are for the use of the engraver, letting us keep track of the entry types. You would probably do best changing colors of individual elements in a graphics program.
