Mac OS Sierra latest Finale bought last year (Finale 25 I think)

In the Finale versions from 2000 to 2010 it was possible to assign different patches to different layers  If strings were playing pizzicato and arco in the same piece, one would simply reserve one layer for pizzicato and write the pizzicato parts for that layer.  Consequently, if half the cellos were playing pizz and the remainder arco at one and the same time there was no problem while playing back.  How do I do this in the latest Finale....they don't seem to have the "instrument list" that the earlier versions of Finale had.  In fact in the earlier versions I could even have half the cellos playing pizzicato loudly with the other half doing a soft arco....could someone advise?
