v. 26.3.1 and Windows

I have just recently upgraded to this new version of Finale and I am trying to enter marching percussion notes.  But as I hover notes up and down on the staff, it gives me multiple sound options for each line and space.  For instance I try to put a quarter note on the quint toms staff but as I move up and down on the staff before entering, I see options for hi tom/rim shot and things like this.  Is there any way to turn off this feature?  It is incredibly distracting and confusing.  I have looked in the help section and cannot find any information for this.

From your description it sounds like you should create a custom Percussion Layout.

If you're seeing sound names displayed it indicates that there are multiple sounds assigned to the same staff position within the percussion layout. If the sound names don't match what you're expecting to see (hi tom instead of drum 1 for example) indicates that the assigned percussion layout is incorrect.

I've been doing percussion notation with Finale for 25 years. It can be complicated but once you get a handle on the process it makes sense. Let me know if you have questions.
