Do I use the standard or notation with Cubase 8?

You can use either one.

 

The regular patch is a little more flexible than the notation one in that the GUI portion of the instruments have more controls.  Under the hood (the main sfz file), they are pretty much identical.  They both seem to respond to all the same CC messages in a universal way.  The main difference is that the keyswitches get pushed down to start at MIDI note 0 in the Notation versions, and the regular versions put the key switches just under the lower notes in the instrument's range, and tend to show more controls in the GUI.

 

If you plan to port MIDI files back an forth from something like Finale or Sibelius it might be wise to use the notation versions.  Otherwise, use whichever you like best.
