Finale v25 on a macbook pro. I am trying to set up a very simple score for:
Electric guitar
Organ (1 staff please)
Electric bass
Drums
Every time I attempt this I get an extra bass clef staff above the elec bass (with no instrument name)
And I get a 2 stave organ part even though I have selected just organ and not organ 2 stave
Nothing like starting off a project stumped! Please help,

Unfortunately the program follows the standard practice of creating the organ as a three-staff instrument where the lower staff is meant for the pedal playing, and the two upper staves are meant for the manual playing.
Workaround:
For the organ staff, just add a staff for some one-staff instrument, e. g. Melodica.
Then go to
Window menu > ScoreManager > Instrument List
In the column Sound you can change the playback instrument.
In the bottom of the Instrument List you can change the staff name, both the Full Name and the Abbreviated Name.
