I have some long expertise in various woodwinds and will be offering suggestions on each specifically. I am one of the top makers of Irish Flutes in the US. I also play Galician Folk Music on Gaita and a flute called a Requinta. I also play traditional bagpipe music from France in the Auvergnese, Bourbonnais and Limousin traditions. Occasionally I make the bagpipes for these traditions as well as the Requintas so I am intimate with the sounds of these. Finally, the "Court Bagpipe" of Musette de Cour is another instrument that Garritan should add. I have made a few of these which are similar to Scottish Smallpipes in sound, but brighter and higher pitched closer to the Northumbrian bagpipes (these evolved from the Musette). It would be great to expand the bagpipe collection to include these instruments if missing and to improve the soundfont for the Gaita. As I am getting knee surgery in 2 weeks and have several flutes to complete beforehand I thought I would just send a heads up currently and let you know what is coming later on - probably during my recovery.
