I need help in selecting a MIDI that will satisfy my wants.

One, I want to be able to practice piano with weighted keys in the middle of the night without bothering neighbors. Pedals? Two, I want to be able to compose on the Midi and have it populate on the desktop screen/MAC in the Finale app. Three, what are those 'sliders' on a MIDI?

I don't know where to begin as there are so many to pick from. I seriously practice many hours on the piano, but I also want to be able to practice late at night in mute on so neighbors will not hear me.

Please help with the kind of MIDI to buy.
