I noticed that when I went to Score Manager to add voices to a choral work, that some were coming up SmartMusic and others Garriton.. When I changed them all to Garriton, there was no sound in playback. When I changed them to SmartMusic, I get sound, but it sounds like a cheap Casio.. Under playback, which am I supposed to be using? And it if is Garriton, then how do I default that and get sound?

You are using Mac Finale - right?
Look in the MIDI/Audio menu.
At the top of the MIDI/Audio menu there are two options:
Play Finale Through Audio Units
Play Finale Through MIDI
{Play Finale Through MIDI} is for playback with computer generated sounds (such as SmartMusic SoftSynth).
{Play Finale Through Audio Units} is for playback with sampled sounds (such as Garritan Instruments for Finale).
As you have found out, sampled sounds generally sound better than computer generated sounds.
The flip side is that sampled sounds are more “RAM hungry”.
Also, note that the MIDI/Audio menu has the command
Reassign Playback Sounds
