I'm transcribing a 200 year old manuscript and need to put double sharps on my copy. How are double accidentals placed on notes.

Do you mean the X of a double sharp, or two sharps, as ##? The ## glyph can be found in the Finale Maestro or Bravura font. A "modern" X can be applied and hidden, and the ## applied as an expression; playback will be correct.
If you're using F27, it's even easier; in Document Options > Accidentals > Music Characters > Double Sharp, make the selection from Finale Maestro > Standard Accidentals. (I never thought I'd say this, but for this use, SMuFL wins!) You apply it the same way, two taps on the + key.
