You start by entering all the notes in one staff or the other. Look up “cross-staff notation” in your help files.

A quick google search reveals nothing as a symbol. You can add no vib. or no vibrato as a text expression.

You could also use the Mixer to mute or solo tracks.

As far as I know, and all it says on the website, it’s digital only. Still, it might be worth opening a support ticket and asking. Use the Submit a Request tab at the top of the page.

Jeff is right about the need to manually respace. You might also try making adjustments to the beat spacing chart, to give you more room around the grace notes.
