Do you mean just move the pitch of a note up or down? Simple. Select the note (Selection tool, double click.) The note will turn purple. Up or down arrow to move it. Done. This works on my MacBoo...

That is correct. Finale's colors are for the use of the engraver, letting us keep track of the entry types. You would probably do best changing colors of individual elements in a graphics program.
