Are you talking about changing the key signature of the entire score or just certain transposing parts?

You can name staves pretty much whatever you want in the Score Manager. (You will probably also want to deselect the Auto Number Style Box as well for your specific goal.

In Windows, choosing the handle for displaced note(s) and pressing the Backspace key resets the note(s) to normal placement. Not sure what the corresponding key is on a Mac.

If you started by using the demo, no Garritan files would have been loaded. If you then pay for Finale, you would have to download at least the Garritan files to have the full paid package.
