With the Selection tool, double-click on the bracket. Handles will appear, and you can edit from there.

Are you putting it in the right place? If I recall correctly, there are two folders with the defaults.

You might also try: Select All > Clear Selected Items… In the next screen, first click None, and then click MIDI Data, and OK

Enter that third note as an eighth (or whatever you want as the grace note.) Once you've converted it to a grace note, it will no longer "count."
