using a MacBook Pro, macOS Sierra 10.12 with Finale 2017.  All notes I try to input are showing up only as rests.

Then it is likely your MIDI keyboard is not connected, or you have not activated the MIDI entry option in the Speedy menu.

I am not using a Midi keyboard.  I am trying to use the laptop entry.
