Is there a way to enter cresc/decresc symbols across multiple staves at once?

No, but you can use the Edit > Copy Filter to copy just the smartshapes (or smartchapes and dynamic expressions, etc.) from one or more measures on one staff to others in the stack.

The plugin JW Pattern can apply crescendi to multiple staves, if that is what you need.
