Entering notes with a MIDI keyboard in Simple Entry is incredibly laggy, and often doesn't work at all, on my M1 iMac running Ventura and Finale 27.3. I'm wondering if the problem is caused in part by the USB-A to USB-C adaptor necessitated for plugging in the keyboard, or if it's a velocity setting. Speedy Entry works fine, though! I tried messing around with the MIDI thru settings, which seemed to help for a moment, but then the issue returned. Anyone else notice this with their setup, and/or have a solution? Thanks very much.

We’re going to need more info:

Does your keyboard require a MIDI driver? Does that driver need to be run over Rosetta 2?

As long as your adapter supports USB-2 (480KB/s), you should be good. Not all USB-C cables do (read the specs) but it’s required for CoreAudio/MIDI. USB Printer cables support only USB 2, backwards compatible to USB 1.1 (many MIDI keyboards, interfaces and hubs are USB 1.1).
