I am transcribing a piece in 12/8 time. I would like some beats to be only two sounds (duples) instead of three sounds. How can I notate this?

The Tuplet Tool. If you need to change this in a lot of measures l there are other ways, as well.

Thusly, showing one, two, and 3 notes per beat.

 

As Mike H says, a number of ways to do it!
