sometimes Print Music 2014.5 has bar lines connection the two upper staves in organ music, and sometimes not. How I can ADD full two-staff bar lines?

Select a grand staff for your organ manuals and leave the pedals as a separate player.

 

Or (if PM can do this) select the two manual staves (Staff Tool) and define them as a group with the brace as a grouping symbol.
