I have a measure that's already written, apart from a flourish of grace notes. I want them alternating in the hands like what I drew in purple (exact pitches will be different ofc); what you see in black is what's already there in finale:
What's the best way to do this? Since that half-note is sitting there at the beginning of the measure, it doesn't want to let me cross them. Can I write them in the staffs separately and then combine the beams somehow?

I see no difficulties with the cross-staff notation.
The real problem here is the clef change; you need the Bass Clef to appear before the grace notes.
I was able to get the Bass Clef at the right position via a workaround:
1) Enter the half as a hidden tuplet: 2 Quarters in the space of 1 Quarter.
This means that the half has a duration of a quarter only (= only the first beat in the measure).
2) On the second beat, enter the clef change.
The Bass Clef will position itself before the second beat (= before the grace notes).
(To hide a rest, either move the rest down, e. g. with the plug-in Move Rests, or hide the rest by hitting the letter H key)
… It was just 'being buggy' and not letting me drag the desired notes up (I was putting them on all the bottom stave) …
From your description it sounds like you used the Note Mover Tool.
Instead, I used the keyboard shortcut to the Cross Staff plug-in:
1) Create the Tremolo first, using the Easy Tremolos plug-in.
The plug-in Easy Tremolos may “unbeam” grace notes; it is recommended that you run Easy Tremolos before you create grace notes in the same measure.
2) Enter the notes as 32nds.
When you have “cross-staffed” the notes, you can turn them into grace notes.
3) Apply Note Spacing, and make the measure wide so that you can select only 1/32 of the measure (= only the duration of a single 32nd).
3) (Selection Tool). Drag-select the staff for only one 32nd (= the 32nd you are going to “cross-staff”).
4) Hold down the correct modifier key (Windows: ALT; Mac: Option), and hit the UpArrow key to move the note up into the staff above. Repeat this step for each 32nd.
5) Turn each 32nd into a grace note.
If you do the grace notes in “backwards order”, beginning with the rightmost note, the grace notes will remain beamed.
