David, Macs don't use a special format for the templates, and that's why you don't see that option. Set up the doc like you want it, and then save it with an identifying name in the template folder...
You can go to your account on the Finale site, and tap My Software. You should be able to download it from there.
The only thing I could suggest at this point would be uninstall and reinstall Finale.

Are you using the gliss tool, or the arpeggio articulation?
What instruments are involved? How do you go across from a 5-line regular notation to what appears to be a 4-line percussion staff?
