Randy, If you enter the text on the title page itself, you can enter the flat symbol, since you can choose the font. It's just in the File Info dialogue that you can't.
I don't know. That's exactly what I do, and I've never noticed a problem. If something worked yesterday, and now it doesn't, restart the computer. If that doesn't help, trash the preferences.
I suspect that part of the problem is Windows 7. Since it is 32-bit, and F 25 is 64-bit, there might be an issue. However, others have mentioned slowdowns, as well. You might try more frequent rest...
