If you choose the note in Speedy Entry, you can press the asterisk key to force the accidental to display.

Are you putting different stanzas in the different verses in the Lyrics Panel? You can also specify different stanzas and then type the syllables directly into the music if you wish.

If Peter's suggestion does not work (which would be rare in and of itself) be sure your dynamic is applied to an active layer. I must admit I have not yet experienced your situation.
