I have a previous version of Finale and want to make the update the default when opening. How do I make the latest version the default.

Easy. Run Get Info on any Finale file. You will be able to select a default application for all files of that type—if the latest version doesn't show up, browse till you find it and then Select. Check the box to use that app to open all files of that type. Click the button that says Change All.
