Very limited number of default symbols...Lots of cryptic keyboard shortcuts, easily forgotten, even after repeatedly watching help videos--any way we can go "back to the good old days" of Finale for this?

I don't know...

 

I always have the User Manual open on another screen or on my when I'm using Finale. I do not try to keep track of everything I am supposed to remember. Life's too short.

Wise protocol, The when it does not provide, my answers, and I have to go to tech-support, and they give me answers that are NOT in the manual…

On previous versions of finale, the library of quickly available chord symbols was always there. When you wanted to adjust the size of the cord symbol, you didn’t have to separately change the size of the font, the size of the#or b, AND the size of the chord suffix.. It was a one shot deal. Now it takes more time to end. Record symbol than it does to enter all the notes of the score.
