I'm in 6/8, the 8th notes are beaming separately, how do I get them beamed together?  3 notes per beam?

Define 6/8 as two dotted quarters  in the Time Signature screen.

I think that if you choose it from the context menu, that’s how it’s set up.

You can also beam selected notes with the Patterson Plugins.
