You use the Option key on Mac, Alt on Windows, when you tap the 5 (or whatever.) It’s always been like that, as far as I can remember.

Sounds confusing to me, but what do I know? Was this common practice with baroque scores? As a singer, I would much prefer my part beamed to the time signature, not the lyrics.

Yes. As long as you only have two authorized installations, the platform doesn’t matter.
