To start you need to check your audio driver to make sure it is not taking exclusive control of your sound card.
You need to figure out the MIDI numbers from the Garritan Manual. The ones you see in parentheses in the Layout screen are not available in the soundset/map you are using.

The MIDI number of a sound is specific to the soundset you use. If you are not sure what the note number of a specific soundset is, read the manual for that soundset.

Looks like a font problem. If Mike's advice (to restart the computer) doesn't work, have you changed the font or font size from the Finale default? Not something I would recommend.
The Alternate Notation button on the Staff Style Configuration/Creation screen gives access to this, which is what I believe you want.
