The semicolon in Speedy entry has long been the shortcut to change a regular note into a grace note.
Choose a measure in the locked system and use Utilities > Unlock Systems (CTRL-SHIFT-L).

Kathleen, Mike is right. We don't need to see the whole screen, just the dialogue box. ALT+PRTSCN will copy the top window. Paint will allow you to crop and annotate it.
Can you see handles on any of your Finale items, or has someone reset the default size/transparency in your preferences?
You can also highlight the area with the clef tool and double-click in the highlight to choose the clef. It also has a handle.
